Chicken in creamy saffron sauce. My mouth is watering. Chicken is so versatile. Enter books have 
been dedicated to numerous recipes for this feathery friend. I will admit, right off the bat, safron is a favorite of mine. It’s expensive I know, but it is so delicious and delicate. By the way, in my book, you can’t go wrong with cream.




Make chicken in creamy saffron sauce on a weekend, to share with your family or friends. Although it sounds fancy you can make this meal in about one hour. Really! Now, I will admit that saffron is kind of expensive, but a little goes a long way. I often get asked: Why is saffron so darn expensive? Is there a substitute? Well, it’s so expensive because it has to be harvested by hand. It takes about 70,000 stems to get a pound of saffron. Holy cow!!! Yup, that’s a lot of stems, and a lot of picking.  Now, as far as a substitute? Sorry, but no! No spice or herb is a good substitute for the delicate taste of saffron.
The word saffron is of Arabic origin: Za’fran,  meaning yellow. Interestingly enough, the Spanish word for saffron is azafran, almost identical to its Arabic counterpart. The deep reddish threads (stigma) of the crocus turn a deep yellow when they come in contact with water. Saffron features prominently  in Persian and Mediterranean cuisine. You can’t possibly make a paella (the typical Spanish seafood and rice dish) or an Adas Polow ( a Persian dish consisting of rice, lentils and raisins) without saffron.  Apart from its use in savory dishes, saffron is also used in cakes and other sweets. More on that later.

Saffron has often played a prominent role in world history.  In ancient Egypt for example, it was used as an additive to perfume, as a dye, and also as medicine. It also had a religious use: saffron cakes were used as offerings the gods.  In ancient Mesopotamia saffron was used as both an aromatic and as an aphrodisiac.  And, in the profitable spice trade of the Middle Ages, it was considered among the most desired spices along with cinnamon, cloves, ginger and nutmeg. According to Greek mythology, the god Hermes accidentally struck his friend Croco lethally wounding him. In the spot where blood dripped, Hermes touched his sword and flowers began to grow.  These flowers were, well… crocuses! Another reference to saffron in Greek mythology has Zeus sleeping on a bed of saffron.
Saffron also appears in the social rituals of antiquity. Saffron was allegedly scattered at the feet of Roman emperors; not surprising given the excesses that characterized the Roman Empire. Along the same vein, saffron is supposed to have been sprinkled on the couches of fashionable homes so guests could breathe in the sweet aroma. I just hope the couches were not white!!!  It was also thrown on the beds of newlyweds in Ancient Rome (Remember saffron’s aphrodisiac use in ancient Mesopotamia?.)
So now that you know more about saffron than you ever thought possible, I think you will enjoy making this delicious chicken in creamy saffron sauce. After all, saffron is a winner in my book, and chicken? Well you can never go  wrong with chicken, or cream! right?             INGREDIENTS
  • 2½ lbs. chicken breast
  • 1 tsp. Kosher salt
  • ½ tsp. cracked pepper
  • ⅛ tsp. nutmeg
  • 2 egg beaten
  • 1 cup flour
  • Vegetable oil for pan frying.
  • For the sauce:
  • 1 Tbsp. olive oil
  • 1 shallot minced
  • 1 garlic clove minced
  • ¾ cup heavy cream
  • ½ cup white wine
  • ½ tsp. saffron
  • 2 Tbsp. chopped parsley
INSTRUCTIONS
.Preheat oven to 200'F
Cut each chicken breast half into two pieces width wise. Lightly 
pound each piece to about ¼" thickness
In a small bowl mix together the salt, pepper and nutmeg
Place beaten egg and flour in two separate shallow bowls ( a couple of pie pans work very well)
Add salt mixture to flour and mix well
Dip the chicken breasts into the egg and then into the flour until they are well coated
Heat oil in a shallow frying pan. Use only enough oil to cover the bottom of the pan
Fry each chicken breast piece for about 3-4 minutes on each side. You might have to add some oil for every batch of chicken breasts you cook
Place the fried chicken breasts in an oven safe platter and place in oven to keep warm
:To prepare the sauce
In the same pan, on medium heat saute the shallot and garlic until shallot is translucent. Deglaze with wine. Scrape up the little bits and continue to cook until most of the wine has evaporated. Add the cream, and saffron. Cook sauce on low for about 5-10 minutes or until nappe consistency
.Remove from heat
Bring the chicken breasts out of the oven and pour saffron sauce over the chicken breasts
.Sprinkle with parsley

Not that I do not love salads, because I do! I have one coming your way, but just not today. I hope you do not mind, but I thought I would ease you guys into January with Gerard family healthy comfort food.
Chicken and rice. It is honestly more comforting to me than a lot of really cheesy, heavy dishes. It’s just what I grew up on, so I think I can come up with probably like a million different ideas involving chicken and rice.

Anyway, I was this close (as I pinch my fingers together like you can actually see me or something) to posting a salad today, but then I stopped myself. I figured probably everyone and then some would be posting salads today. It is January second and everyone knows the diets start today.
Personally, I do not diet – exercise, moderation and healthy lifestyle changes are more my style. Therefore, my New Year’s goal is simply to create a killer year of food for you guys. A year that includes one delicious recipe after the next. I hope that many will be healthy and delicious, and that others are super indulgent and over the top, because let’s be honest, you know I love those. But mainly, I hope most will be colorful, homemade, simple and easy meals that you guys will all want to create. Meals that you will enjoy making and that will be even more enjoyable to eat.
I am not a New Year’s resolution person at all, but I love setting goals and my number one goal this year – create amazing recipes!

Well, this one goes right along with number one. Create amazing recipes – with photos that do each recipe justice. Both goals are challenging in their own way, but I do seem to love to stress myself out. I guess it is just what I do.

Don’t go getting all bored on me yet, chicken and rice doesn’t have to be boring. This chicken and rice is spiced up, stir fried, cajun chicken and veggies tossed together with a mix of basmati and wild rice.
If you are trying to go completely whole grain just use all wild rice, but my family has a serious soft spot for basmati. It is our favorite.

It is super simple and super quick, but I am coming to realize that not every meal needs to be complex and over the top. It is still a hard thing for me to grasp since I really love a variety of textures, colors and flavors, but like everyone always says, often simple is really all you need.
Especially when life is crazy busy and it is back to work and the real world after two weeks of pure holiday awesomeness.

30 Minute Healthy Cajun Chicken and Rice.

Ingredients

  • Rice
  • 1/2 cup wild rice
  • 3/4 cup basmati rice
  • 2 1/2 cups water or low-sodium chicken broth
  • Cajun Chicken and Peppers
  • 1 pound boneless skinless chicken breast, cut into bite size pieces
  • 2 tablespoons olive oil
  • 1 tablespoon cajun seasoning
  • 1 tablespoon creole seasoning
  • 1/2 tablespoon brown sugar
  • 1 teaspoon sweet paprika
  • 1 teaspoon pepper
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon dried thyme
  • 2 tablespoons soy sauce
  • 1 large red pepper, chopped
  • 1 large orange pepper, chopped
  • 1/2 a onion, chopped
  • 2 cloves garlic, minced or grated
  • 1 (14 ounce) can diced tomatoes
  • 2 tablespoon fresh parsley, chopped, plus more for garnish

Instructions

To start the rice. Add the water to a medium size soup pot. Bring to a low boil and then add the rice and a pinch of salt. Stir to combine and then place the lid on the pot and turn the heat down to the lowest setting possible. Allow the rice to cook ten minutes on low and then turn the heat off completely and let the rice sit on the stove, covered for another 20 minutes (don't take any peeks inside!). After 20 minutes remove the lid and fluff the rice with a fork. Note that rice can cook differently for everyone, this is just what works for me.
Meanwhile heat a large skillet on medium high heat and add 1 tablespoon olive oil. In a small bowl combine the cajun seasoning, creole seasoning, brown sugar, pepper, cayenne, sweet paprika and dried thyme.
Add the chicken and the spice mixture to the skillet and give it a good toss. Then spread the chicken in an even layer and allow it to cook, without stirring for 2-4 minutes. Then stir the chicken and add the soy sauce, continue cooking another 5 minutes or until the chicken is browned all over and cooked through. Remove the chicken from the skillet and set aside.
Add the remaining tablespoon of olive oil to the skillet. Add the red pepper, orange pepper, onion and garlic. Stir fry the veggies for about 5-10 minutes or until the onions are soft. Add the chicken back to the skillet and toss well. Now stir in the diced tomatoes and simmer until almost all the liquid has evaporated. Remove from the heat and add the chicken mixture to the rice. Toss well and serve! Garnish with chopped parsley if desired.

It’s the perfect solution for when your brown sugar gets too hard for baking. It dissolves right into the liquid of the marinade. Technically speaking…I did not measure the brown sugar exact here, but that’s the beauty of cooking vs. baking, right?!
Let it marinade for at least 4 hours or best over night. Give it some time to marinate.

  • 1 cup brown sugar
  • 1 cup oil
  • ½ cup soy sauce
  • ½ cup vinegar
Instructions
  1. Mix all ingredients together in a bowl or a ziplock bag. Place chicken in the marinade. Marinade chicken for at least 1 hour or over night.
  2. Here's Kyle's best grilling tips when it comes to chicken: Fire up the grill...preheat to medium high. Place the chicken breasts on the grill and do not touch them for 6 minutes. Right at 6 minutes, you flip them over and then don't touch them for another 4 to 5 minutes. Then move it over to a plate and let it rest a bit (not long) and then serve.


It’s the best grilled chicken! You’ve gotta try it!

Chicken and Mushrooms are a classic pairing that just seems meant to be amiright?  I
 guess some of you mushroom haters would disagree – but otherwise I’m hoping the rest of you are still with me!




Growing up my brother hated mushrooms to an extreme degree, so my mom rarely cooked with them.  It was unfortunate for me, because I’ve always loved mushrooms, so when I got old enough to do my own cooking, I started experimenting with all of the delicious ways they could be prepared.
I’m grateful that Hungry Jr. is like me and not my brother, he is a big fan of mushrooms – especially any time they are fried in butter.
!Which makes this easy skillet chicken & mushrooms recipe a hit at our house every time



I typically use tarragon in this recipe when I make it, but this summer I experimented with savory and it was a completely different flavor that we really loved.
If you can’t find the savory though, tarragon, or almost any other fresh herb (basil, oregano, thyme, or even dill) will work great in this versatile chicken recipe.
With just a few delicious whole food ingredients, this recipe is not only low carb and keto friendly, but dairy free, egg free, and nut free – not to mention Paleo and Whole 30 approved as well!

As far as serving suggestions go, I probably don’t have to tell you that this skillet chicken & mushrooms recipe is amazing served over my “Better than Potatoes” Cheesy Cauliflower Puree, but I’ll say it anyway!

Unless cauliflower is still super expensive where you are – then I recommend the Cheesy Ranch Roasted Broccoli and/or Pan Roasted Radishes as perfectly acceptable low carb side dishes!
Whatever you serve it with, this low carb skillet chicken & mushrooms recipe is sure to be a hit – unless someone in your family is a fungi-phobe like my brother.
In which case I highly recommend my Easy Paprika Chicken with Sour Cream Gravy instead – it’s also delicious and totally mushroom free!






INGREDIENTS
  • ¼ cup butter
  • 2 cups mushrooms, sliced
  • Four large chicken thighs
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ½ cup water
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Summer savory or fresh tarragon, chopped
INSTRUCTIONS
  1. Season the chicken thighs with salt, pepper, onion powder, and garlic powder.
  2. Melt 1 tablespoon of the butter in a heavy bottomed sauté pan, preferably cast-iron.
  3. Sear the chicken thighs on both sides until golden brown - about three or four minutes per side. Remove the chicken thighs from the pan.
  4. Add the remaining 3 tablespoons of butter to the pan and melt. Add the mushrooms to the pan and cook until golden brown, stirring as little as possible for about 4-5 minutes.

  1. Add the water and Dijon mustard to the pan, and stir to deglaze.
  2. Add the chicken thighs back to the pan, skin side up.
  3. Cover and simmer for 15 minutes until the chicken is cooked through.
  4. Stir in the fresh herbs and let it sit for five minutes before serving. Serve hot.

Hi, all! Hope you had a great Easter weekend! The weather has been beautiful here and it’s time to get the garden together in furious fashion. With spring cleaning, gardening, and Easter all 
converging, simple meals have been the menu lately. You really can’t beat grilling for easy dinners.

 I love to fire up the grill any time of year and definitely don’t wait till the summer. Today’s recipe is a very simple Citrus  Marinade that will satisfy a hungry family. I know that whenever I find something to satisfy both of my biggest critics, it’s a home-run at our house.

 This marinade is perfect for chicken and pork dishes. I will bet that it is awesome with salmon as well, although I have never used it.



If you want to make chicken kabobs with this marinade, cut your meat and vegetables about 1 – 1.5 inches thick. The key is to keep the thickness even. You can use any vegetables you like such as red or green pepper, onions, and mushrooms. Generous pineapple chunks are beautiful when grilled as well. I absolutely love grilled pineapple because of how the grill caramelizes the pineapple edges slightly.


Citrus  Marinade

  • 1.5 tbsp vegetable oil
  • 3 tbsp tomato paste
  • 1/2 cup low sodium soy sauce
  • 1/3 cup honey
  • 1/2 cup pineapple juice
  • 1/2 tsp ground ginger
Whisk all ingredients together in a small bowl. Pour over chicken or pork. Marinate for 2 hours or overnight.
